From The Joy of Cooking again. I think perhaps the bare simplicity of these recipes reveals that I am not a very experienced cook, if I'm writing them out here. But how else will I be able to remember how to cook these? I cooked these in the leftover grease from my pork chops. Use a large skillet and give the mushrooms plenty of room so that they will brown instead of steam in their own juices. These are great over steak or grilled fish, stirred into 2 cups cooked pasta or rice, or as an omelet filling. Heat in a very large skillet over high heat: 2 12 to 3 Tbs butter or olive or vegetable oil, or a combination Add: 1 pound any variety of combination of mushrooms, wiped cleand and sliced Cook, tossing constantly, until the mushrooms begin to color, 5 to 7 minutes. Add: 1/4 to 1/3 cup chopped fresh parsley 2 to 3 cloves garlic, chopped Cook for 1 minute more. Season with: Salt and ground black pepper to taste. Serve immediately.
